- 1 lb. sausage, browned (can be low-fat)
- 6 eggs or egg substitute
- 2 c. milk
- 1/2 tsp. salt
- 1 tsp. dry mustard (optional)
- 6 slices bread
- 1 c. grated cheese
- black pepper to taste
Directions

1Brown sausage.

2Drain.

3Beat eggs with milk, salt, mustard and pepper.

4Place bread slices in a buttered 9 x 12-inch casserole. Cover with cheese and a layer of sausage.

5Pour egg mixture over layers and sprinkle with a little extra cheese.

6Refrigerate overnight.

7Bake at 350° for 30 to 35 minutes.

8Serves 8 to 10.
