Breakfast Casserole

Ingredients

  • 5 to 6 slices bread (can use white or wheat)
  • 2 eggs
  • milk (added to the two eggs to make 1 1/2 c.)
  • 1/4 tsp. dry mustard
  • 4 oz. Cheddar cheese, shredded
  • 1 lb. sausage (your choice), fried and well drained
  • 1 can cream of mushroom soup
  • 1/2 c. milk (may use skim)

Directions

    Break up bread in 9 x 13-inch pan sprayed with Pam.

    Add milk to eggs to make 1 1/2 cups and add dry mustard to egg mixture. Pour over bread.

    Sprinkle with Cheddar cheese (may add more than 4 ounces if you wish).

    Sprinkle with sausage (fried and drained). Let set overnight (in refrigerator).

    Before baking the next morning, add cream of mushroom soup, mixed with 1/2 cup milk (may use skim).

    Just pour soup mixture over bread and egg mixture. Don't stir.

    Bake at 350° for 45 minutes or until hot and bubbly.
