Breakfast Casserole

Ingredients

  • 6 slices white bread, crusts removed and buttered on one side
  • 1 lb. breakfast sausage, cooked and drained
  • 1 1/2 c. shredded Cheddar cheese
  • 6 eggs
  • 2 c. half and half
  • 1 tsp. salt
  • 1/4 to 1/2 c. thinly sliced green pepper
  • 2 oz. sliced pimento, drained
  • 1/4 c. thinly sliced onion
  • 3 1/2 oz. can chopped green chilies, drained (optional)

Directions

    Line bottom of buttered 9 x 13-inch baking dish with the bread slices, buttered side up.

    Spread the cooked sausage over top. Sprinkle with cheese.

    Mix remaining ingredients together and spread over the cheese.

    Chill overnight.

    Bake at 350° for 45 minutes.

    Serve hot.
