Chicken Pepper Gnocchi

  • vegetable cooking spray
  • 1 1/2 c. chopped sweet red pepper
  • 1/2 c. chopped green pepper
  • 1 c. chopped onion
  • 3 cloves minced garlic
  • 1/4 tsp. ground cumin
  • 1/4 tsp. crushed red pepper
  • 1/4 tsp. salt
  • 1 Tbsp. all-purpose flour
  • 1 tsp. chicken flavored bouillon granules
  • 1/2 c. water
  • 1/2 (16 oz.) pkg. gnocchi pasta (uncooked)
  • 4 (4 oz.) skinned, boned chicken breast halves
  • 1 (6 oz.) pkg. frozen snow pea pods

Directions

    Coat a large, nonstick skillet with cooking spray.

    Place over medium heat until hot.

    Add red peppers and the next 5 ingredients; saute until tender.

    Stir in salt, flour and bouillon granules.

    Gradually add water; bring to boil, stirring constantly.

    Set aside and keep warm.

    Cook pasta according to directions, omitting salt and fat.

    Drain and set aside.
