Ingredients

  • 10 potatoes, peeled and cubed
  • salt and pepper
  • 1 lb. bacon
  • 1 lb. American cheese, shredded
  • 6 eggs, mixed with 1/2 c. milk

Directions

    Fry potatoes until done in a 10-inch skillet.

    In separate skillet, fry bacon; drain and crumble.

    Drain potatoes, then pour egg mixture over top of fried potatoes.

    Place in preheated 350° oven for 8 or 10 minutes, until eggs are set.

    Take from oven. Place shredded cheese over egg-potato mixture.

    Add bacon to top of casserole.

    Place in oven for 8 to 10 minutes, until cheese is melted. Serves 8 to 10.
