- 6 slices bread
- 2 c. sharp cheese, shredded
- 2 c. Jack cheese, shredded
- 1 (4 oz.) can green chilies
- 6 beaten eggs or egg substitute
- 2 c. milk
- 2 tsp. salt
- 1 tsp. paprika
- 1/2 tsp. each black pepper and dry mustard
Directions

1Trim crusts off bread and butter one side.

2Place bread, buttered side down, in baking dish or 9 x 13-inch pan.

3Sprinkle with 2 cups shredded sharp cheese, then Jack cheese.

4Sprinkle chopped green chilies over cheese.

5Beat eggs, add milk, salt, black pepper and dry mustard.

6Beat until well blended and pour over bread-cheese.

7Sprinkle on paprika.

8Refrigerate overnight (this is a must).

9Bake uncovered 50 minutes at 325° to 350°. Allow to set 10 minutes before serving.
