- 2 c. sliced carrots
- 2 c. sliced celery
- 1 large onion
- 1 clove garlic
- 2 eggs, scrambled and chopped
- 4 c. cooked rice
Directions

1Brown sausage and drain off grease.

2(Roll sausage in a few paper towels for more removal of grease, if desired.) Return sausage to skillet and add carrots, celery, onion and pressed garlic.

3Simmer in covered skillet until desired tenderness.

4Add eggs and rice.
