- 2 small tomatoes, quartered
- 4 tsp balsamic vinegar
- 5 oz mushrooms, thickly sliced
- 4 oz baby spinach leaves
- 2 tbsp coarsely chopped fresh basil
- 4 slices rye bread, toasted
Directions

1Preheat the oven to 425°F.

2Place the tomato in a small shallow baking dish. Drizzle with 2 tsp of the vinegar. Roast, uncovered, for about 10 mins.

3Cook the mushrooms, spinach and remaining 2 tsp vinegar in a large skillet on medium heat, until the mushroom is tender and the spinach wilts. Stir in the basil.

4Serve the tomato and mushroom mixture on toast.
