  • 4 potatoes, peeled and shredded
  • 1/2 lb. bologna, cut into strips
  • 1 green pepper, cut in strips
  • 4 eggs
  • salt and pepper
  • mushrooms (optional)

Directions

    Fry potatoes in skillet with 2 tablespoon oil.

    After potatoes are brown, add bologna; let bologna brown.

    Add green pepper; salt and pepper to taste.

    Scramble eggs and add to potato mixture.
