  • 2 1/2 c. all-purpose flour
  • 2 Tbsp. baking powder
  • 1/3 c. sugar
  • 2 c. shredded wheat bran cereal
  • 1/2 c. regular oats (uncooked)
  • 1/2 c. corn meal
  • 2 c. milk
  • 2 eggs
  • 1/2 tsp. vegetable oil

Directions

    Combine flour, baking powder and sugar. Mix bran, oats and corn meal together; stir in egg and oil. Add to dry ingredients. Pour into greased muffin pans, filling each cup 2/3 full. Bake at 400° for 20 minutes. Serve warm or split and toast.
