- 20 inches flour tortillas
- 2 cups monterey jack cheese, shredded
- 2 eggs, scrambled
- 12 cup sausage, cooked, crumbled
- 14 cup green onion, diced
- 14 cup tomatoes, diced
- guacamole (optional)
- sour cream (optional)
- salsa (optional)
Directions

1Place tortillas in heated 12-inch skillet (or on a griddle).

2Evenly sprinkle cheese over the top of flour tortillas.

3Place scrambled eggs on top of cheese on one tortilla.

4Evenly distribute the cooked, crumbled sausage over the eggs.
