  • 3 (3-oz.) packages ramen noodles, prepared according to package instructions, discarding seasoning packet
  • 2 large eggs
  • 1/2 cup shredded smoked Gouda cheese
  • 2 sweet peppers, diced
  • 1 tomato, diced

Directions

    Heat bacon in a large skillet over medium heat; cook, stirring often, until crispy. Remove bacon to a paper towel-lined plate using a slotted spoon; set aside.

    Add ramen noodles to the bacon drippings in pan over medium heat. Stir in eggs and cheese; cook until cheese melts. Stir in the sweet peppers, tomatoes, and reserved bacon. Serve.
