- 3 (3-oz.) packages ramen noodles, prepared according to package instructions, discarding seasoning packet
- 2 large eggs
- 1/2 cup shredded smoked Gouda cheese
- 2 sweet peppers, diced
- 1 tomato, diced
Directions

1Heat bacon in a large skillet over medium heat; cook, stirring often, until crispy. Remove bacon to a paper towel-lined plate using a slotted spoon; set aside.

2Add ramen noodles to the bacon drippings in pan over medium heat. Stir in eggs and cheese; cook until cheese melts. Stir in the sweet peppers, tomatoes, and reserved bacon. Serve.
