- 1 slice Rye Bread Or Sourdough Bread
- 1 Tablespoon Butter
- 2 ounces, weight Mushrooms, Sliced Plus Butter To Fry Them In
- 1 whole Egg
- 2 cups Spring Mix Salad
- Vinaigrette Dressing, To Serve
Directions

1Spread bread with butter on both sides and grill or fry it in the pan with the sliced mushrooms, till brown. Cut bread into crouton size chunks.

2Poach egg or prepare in a fry pan, till the white is cooked and yolk is still fluid.

3Heap salad ingredients on a plate, top with bread and mushrooms, top with fried egg and drizzle vinaigrette dressing on top. Cut into the egg and let the yolk drip over the salad, then fork it up and enjoy.
