- 12 onion
- 5 eggs
- 1 cup milk or 1 cup heavy whipping cream
- salt
- pepper
- garlic
- 2 tortillas
- 12 cup cheese
- 1 small tomatoes

1The night before:.

2Fry the sausage and onion and let cool.

3Beat together the eggs and milk.

4Add salt, pepper and garlic to taste.

5Grease two personal sized casserole dishes.

6Microwave the tortillas for 10 seconds to soften them.

7Fit the tortillas into the casserole dish, so it follows the shape as close as possible.

8Pour the egg mixture into the tortillas.

9Cover the dishes and place in the fridge over night.

11Preheat the oven to 350 degrees F.

12Sprinkle cheese onto the egg mixture.

13Cut the tomato into thin slices and lay them on the top of the cheese and eggs.

14Bake uncovered for about 40 minutes until firm, puffy and just slightly brown.
