Brenda's Fried Deviled Eggs

Ingredients
- 1 dozen eggs
- 1/4 cup chipotle mayo
- 1 tbsp dijon mustard
- 1/4 cup chopped green onions
- 1/4 tsp salt and pepper
- 1 1/2 cup flour
- 2 each eggs, beaten
- 2 cup panko crumbs
- 1 peanut oil for frying
Directions

1Add the eggs to a large saucepan filled to cover eggs with cold water.

2Bring to a boil.

3As soon as the water comes to a good rolling boil remove from heat and let sit in water for about 15 minutes.

4Peel eggs and slice lengthwise.

5Remove yolks to a bowl.

6Add mayo, mustard, onions, salt and pepper.

7Blend well.

8Adjust seasoning to taste.

9Note: you do not want the mixture to be soft and mushy, so that it stays in the whites when rolling for frying.

10Place mixture in a Ziploc bag and clip corner to use to fill egg whites.

11Heat oil to 350F.

12In a medium bowl, add 1 cup of flour and season with salt and pepper.

13(You can add other seasonings here to your preferred taste too).

14In another bowl, beat the eggs, in a third bowl add one cup of panko.

15Dip the eggs into the flour, then the eggs and finally the panko.

16Gently place the eggs into the hot oil.

17Fry slowly until golden brown.

18Remove to a paper towel line sheet tray.
-
19Garnish if you want with paprika and parsley.

20May be served plain or with a dipping sauce.
