Bride's Pudding Recipe

Ingredients

  • 2 env unflavored gelatin
  • 1/2 c. Water
  • 6 x Large eggs
  • 1 pch Salt
  • 3/4 c. Sugar
  • 1 tsp Vanilla
  • 1 pt Whipped cream
  • 1 can Flaked coconut
  • 2 pkt Frzn raspberries, thawed

    Soften gelatin in water.

    Whip egg whites to a froth with a healthy pinch of salt, then till peaks form.

    Slowly fold in gelatin, and vanilla being sure which it is well mixed.

    Whip cream and fold into gelatin mix.

    Butter a springform pan.

    Press most of the coconut onto sides and bottom of pan.

    Pour in whipped cream mix.

    Top with rest of coconut.

    Refrigeratefor 4-5 hrs till completely set.

    Unmold on large palte and dribble with berries, placing more around edges.

    Serve immediately.
