Ingredients

  • 12 cup kosher salt
  • 23 cup sugar
  • 1 tablespoon peppercorn
  • 1 tablespoon rosemary
  • 1 tablespoon mustard seeds
  • 12 teaspoon celery seed
  • 4 tablespoons dried onion
  • 34 gallon water

Directions

    Mix all the above in large pot and bring to quick boil to dissolve salt and sugar.

    Let cool completely.

    Pour over your chicken or pork in covered bowl and let soak for 4-6 hours.

    Drain, pat meat dry with paper towel and prepare as you prefer.
