Ingredients

  • 5 to 6 lb. brisket
  • 2 tsp. salt
  • 1 large sliced onion
  • 1 bottle chili sauce
  • 3 Tbsp. catsup
  • pepper to taste
  • split garlic clove
  • 5 celery ribs with greens, cut into 2-inch pieces
  • 3/4 can beer

Directions

    Rub brisket with salt, pepper and garlic.

    Place in roasting pan.

    Cover with onion slices, celery, chili sauce and catsup. Cook, uncovered, at 325° for about 1 1/2 hours.

    Add beer, cover and bake about 2 hours longer (until tender).

    Cool.

    Lift fat, drain and dispose of onion and celery.

    Slice meat.

    Cover with sauce and warm.
