- 6 to 7 lb. brisket
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 medium onions
- 4 carrots
- 4 potatoes
- 1 c. water
Directions

1Preheat oven to 350°.

2Sprinkle beef with salt and pepper. Place in a large skillet.

3Brown meat on fat side over high heat. While meat is browning, pare carrots and potatoes. Cut in chunks. Slice onions.

4Remove meat and place in large roasting pan.

5Add onions to skillet.

6Saute until golden brown.

7Spoon onions over meat.

8Surround meat with vegetables.
-
9Add 1 cup water.

10Roast covered 2 1/2 to 3 hours or until meat is done.
