Broccoli Bake

  • 2 (10 oz.) pkg. frozen cut broccoli
  • 2 beaten eggs
  • 1/2 tsp. oregano
  • 1 (8 oz.) can stewed tomatoes, cut up
  • 2 Tbsp. grated Parmesan cheese
  • 1 (10 3/4 oz.) can condensed Cheddar cheese soup

Directions

    Cook broccoli in unsalted water 5 to 10 minutes until tender; drain. Preheat oven to 350°.

    Combine eggs, soup and oregano. Stir in tomatoes and cooked broccoli.

    Turn into a 10 x 6 x 2-inch baking dish. Sprinkle with Parmesan.

    Bake, uncovered, 30 minutes.
