Broccoli Bisque

  • 1/2 cups Onion, Chopped
  • 1 clove Garlic
  • 1 stick Butter
  • 20 ounces, weight Frozen Chopped Broccoli, Thawed
  • 2 cups Chicken Stock
  • 1 teaspoon Basil
  • 3/4 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1 cup Light Cream

Directions

    Saute onions and garlic in butter for 5 minutes. Add broccoli, chicken stock, basil, salt, and pepper. Cover and allow pot to simmer for 15 to 20 minutes. Pour mixture into a blender and puree until smooth. Return mixture to the original pot and add cream. Heat on the stove until just before it begins to boil.
