Broccoli Casserole

  • 2 (10 oz.) pkg. frozen chopped broccoli
  • 1 can cream of mushroom soup
  • 1 c. mayonnaise
  • 2 eggs, well beaten
  • 1 medium onion, chopped
  • 1 c. grated Cheddar cheese
  • 1/4 c. margarine
  • 1 1/2 c. herb-seasoned stuffing crumbs (Pepperidge Farm)

Directions

    Cook broccoli according to directions; drain well.

    Combine soup, mayonnaise, eggs and onion, then blend into cooked broccoli. Pour into buttered 2-quart casserole dish; sprinkle with cheese. Melt margarine; add stuffing crumbs, tossing to mix well. Sprinkle on top of cheese.

    Bake at 350° for 30 to 45 minutes or until real bubbly.
