  • 2 pkg. frozen chopped broccoli
  • 1 c. cream of celery soup
  • 1 c. mayonnaise
  • 1 c. Parmesan cheese
  • Ritz crackers
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1 c. grated cheese (sharp Cheddar)
  • salt and pepper to taste

Directions

    Cook broccoli as package directs; drain.

    Beat eggs.

    Fold in soup, milk, mayo and cheeses; mix well.

    Fold in cooked broccoli. Salt and pepper as needed.

    Crunch Ritz crackers.

    Set aside.

    Pour mixture in casserole dish.

    Spread crackers on top.

    Bake at 400° for 15 minutes.
