Broccoli Casserole

Ingredients

  • 2 (10 oz.) boxes frozen chopped broccoli
  • 1/2 c. mayonnaise
  • 1 c. sharp Cheddar cheese, grated
  • 1 can cream of mushroom soup
  • 2 eggs, well beaten
  • 1 medium onion, finely chopped
  • 1/2 pkg. Pepperidge Farm stuffing mix
  • 1/2 stick margarine
  • salt and pepper to taste

Directions

    Cook broccoli according to package directions, drain.

    Combine mayonnaise, soup, cheese, eggs, onion, salt and pepper.

    Mix with broccoli and pour into buttered casserole.

    Melt 1 stick of margarine in a saucepan and add dry stuffing mix.

    Stir to blend. spread on top of broccoli mixture.

    Bake at 350° for 45 minutes. Use 2 1/2 to 3-quart casserole dish.

    Serves 8 to 10.
