Broccoli Casserole

  • 2 (20 oz.) bags frozen chopped broccoli
  • 1 can cream of mushroom soup
  • 1 c. mayonnaise
  • 8 oz. pkg. grated Cheddar
  • 2 eggs, slightly beaten
  • 2 Tbsp. chopped onion
  • Ritz crackers or bread crumbs (approximately 12 crackers)

Directions

    Cook broccoli as directed.

    Drain and set aside.

    In a bowl, mix soup, mayonnaise, eggs, cheese and onions.

    Fold broccoli into mixture and turn into buttered 2-quart casserole.

    Dot with butter; sprinkle with crushed Ritz crackers.

    Bake uncovered in 350° oven for 45 minutes.
