Broccoli Casserole

  • 1 lb. fresh broccoli or 2 (10 oz.) frozen
  • 2 c. frozen pearl onions or 3 medium onions, quartered
  • 2 Tbsp. flour
  • 1 c. milk
  • 4 Tbsp. butter or oleo
  • 3 oz. cream cheese
  • 2 oz. sharp Cheddar cheese, shredded (1/2 c.)
  • 1 c. soft bread crumbs

Directions

    Cook broccoli and onions separately.

    Cut broccoli into 1-inch pieces.

    Melt oleo; blend in flour, salt and pepper to taste.

    Add milk and cook until thick and bubbly, stirring constantly. Reduce heat and blend in cream cheese, stirring until smooth.

    Place vegetables in 1 1/2-quart casserole.

    Pour sauce over and mix lightly. Top with Cheddar cheese.

    Cover and chill.
