Broccoli Cheddar Dip

  • 1 (10 oz.) pkg. chopped broccoli, frozen
  • 1 pkg. leek or vegetable dry soup mix
  • 1/2 c. Cheddar cheese, grated
  • 1 c. mayonnaise (regular or light)
  • 2 c. sour cream (regular or light)
  • French or pumpernickel bread

Directions

    In sieve, rinse frozen broccoli under warm water to thaw. Squeeze lightly to drain well.

    In medium bowl, combine broccoli, soup mix, mayonnaise, sour cream and cheese.

    Stir thoroughly. Slice lid from top of loaf; hollow out center and fill with dip mixture.

    Chill 2 hours.

    Cut bread from center into cubes of finger-food pieces and serve with dip.

    Makes 12 to 16 appetizer servings.
