Broccoli Cheese Rice

  • 20 oz. chopped broccoli
  • 1 c. rice
  • 3 Tbsp. margarine
  • 3 Tbsp. flour
  • 2 1/2 c. milk
  • 8 oz. Velveeta

    Cook broccoli.

    Cook rice.

    Melt margarine in saucepan.

    Add flour.

    Gradually add milk.

    Stir until thickened.

    Cook 1 minute. Remove from heat.

    Add cheese.

    Stir until melted.

    Add rice.

    In 13 x 9-inch pan, layer 1/3 rice mixture, 1/2 broccoli, 1/3 rice mixture, 1/2 broccoli and 1/3 rice mixture.

    Cover and bake 30 minutes at 350°.
