  • 1 cup cooked rice
  • 1 cup broccoli, chopped
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 4 egg whites, slightly beaten
  • 1/2 tsp salt & pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp parsley flakes

    Preheat oven to 350 A.

    Spray a muffin pan with nonstick cooking spray.

    Set aside.

    Mix all ingredients reserving 1/4 cup of cheddar cheese.

    Fill muffin tin with rice mixture and sprinkle the tops with remaining cheese.

    Bake for 20 minutes.

    Cool & enjoy.
