- 2 (10 oz.) pkg. frozen chopped spinach
- 1 small onion, peeled and diced
- 1/4 stick butter or margarine
- 1 (3 oz.) sour cream
- 1 (3 oz.) cream cheese, softened
- 1 (8 oz.) grated Parmesan cheese or to taste
- 2 eggs, beaten
- 2 hard-boiled eggs
- salt and pepper to taste
Directions

1Cook spinach according to package directions.

2Drain thoroughly.

3Mix together remaining ingredients.

4Add to spinach. Mix together well.

5Pour into shallow baking dish.

6Top with a little extra Parmesan cheese.

7Bake at 350° for about 30 minutes or until casserole is bubbly.
