Broccoli Chowder

  • 2 lb. fresh broccoli
  • 2 (12 1/2 oz.) cans chicken broth
  • 2 c. milk
  • 1 c. chopped ham
  • 2 tsp. salt
  • 1/4 tsp. black or white pepper
  • 1 c. light cream
  • 1/2 lb. Swiss cheese, grated

Directions

    Wash and separate broccoli into stems.

    Cover and boil broccoli in 1 can of chicken broth for 8 to 10 minutes or until done.

    Boil, covered.

    Remove from broth, cool and chop coarsely. Add all ingredients to broth.

    Add the other can of broth and heat to desired temperature, stirring often, until slightly thickened.
