  • 3 eggs, slightly beaten
  • 1/2 c. brown sugar
  • 1/2 c. granulated sugar
  • 1/2 tsp. salt
  • 3 tsp. pumpkin pie spice
  • 2 c. cooked pumpkin or 1 can pumpkin
  • 1 can evaporated milk
  • 2 unbaked pie shells (regular size)

Directions

    Combine eggs, sugar, salt and pumpkin pie spice; blend well. Blend in pumpkin.

    Add evaporated milk and blend well. Pour into pie shells.

    Bake in preheated oven at 450° for 10 minutes, then reduce heat and continue baking for 40 minutes or until knife inserted in center comes out clean.

    Cool.

    Top with Cool Whip, if desired.
