  • 3/4 c. skim milk
  • 1/2 c. shredded Cheddar cheese (low-fat)
  • 1 egg
  • 10 oz. broccoli spears, thawed and chopped
  • 1/8 tsp. salt
  • 1 clove garlic
  • 2 Tbsp. margarine
  • 2 slices dry whole wheat toast
  • 1 Tbsp. Parmesan cheese

Directions

    Combine milk, margarine and cheese in saucepan over low heat until cheese melts.

    Cool and stir in egg.

    Place broccoli in greased 1-quart baking dish; sprinkle with salt.

    Pour cheese mixture over broccoli.

    Cook and stir garlic in margarine for 2 minutes.

    Add toast cubes and stir until butter is absorbed. Sprinkle over broccoli; top with Parmesan cheese.

    Bake at 350° for 30 minutes.
