Broccoli Corn Bread

  • 1 1/2 sticks oleo
  • 1 onion, chopped
  • 1 (10 oz.) pkg. chopped broccoli
  • 1/2 stick oleo
  • 1 pkg. regular corn bread kit
  • 1 pkg. Mexicorn bread kit
  • 4 eggs
  • 2/3 c. milk
  • 12 oz. cottage cheese

    Saute onion and broccoli in the 1 1/2 sticks oleo.

    Melt 1/2 stick oleo in a 13 x 9-inch pan.

    Set aside.

    In a large bowl, mix the regular corn kit, Mexicorn kit, eggs, milk and cottage cheese. Add sauteed mixture.

    Pour in buttered pan.

    Bake 30 to 45 minutes at 325°.
