  • 1/2 c. melted butter or margarine
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 3/4 c. cottage cheese
  • 4 eggs, beaten
  • 10 oz. frozen broccoli or fresh broccoli
  • 1 (8.5 oz.) pkg. corn muffin mix

Directions

    Combine all ingredients except the butter or margarine, broccoli and corn muffin mix and put in a 9 x 13-inch pan.

    Cook the broccoli until nearly done.

    Place broccoli in pan. Sprinkle the corn muffin mix over the broccoli.

    Pour the melted margarine over the corn muffin mix.

    Bake, uncovered, for 20 to 25 minutes in a 400° oven.
