Squash Casserole

Ingredients

  • summer squash, washed and sliced into about 1/4-inch slices crossways (enough for your family)
  • 1 medium onion, minced
  • salt, pepper and garlic powder
  • 1/3 c. oleo
  • 2/3 c. shredded cheese of your choice
  • 1/2 c. milk
  • 1 egg, beaten
  • 1 can soup (mushroom, celery, etc.)
  • 1/2 to 3/4 c. Pepperidge herb dressing

Directions

    Cook until just tender (steam, boil or fry) the squash and onion.

    Drain; season to taste with salt, pepper and garlic powder. Mix together remaining ingredients and add.

    Pour into olive oiled baking dish.

    Cover top with additional cheese and herb dressing.

    Bake at 350° for 40 minutes or until browned and bubbly.

    (Accumulated leftover veggies can be substituted for or included with the squash.)
