Broccoli Cornbread

- 4 eggs, beat well (use large eggs)
- 1 pkg. Frozen, chopped broccoli, thaw and drain
- 2 c. cornbread mix (I use Jiffy)
- 1 medium onion, chopped fine
- 1 stick butter or margarine
- 2 Tbsp. Sour cream
Directions

1Add creamed butter to cornbread mix. Add eggs. Mix broccoli, onions and cheese; fold into cornbread mix.

2Blend all together, fold in sour cream last.

3Pour into a greased iron skillet.

4Bake at 350° for 30 to 40 minutes.

5Test with toothpick after 30 minutes.
