- 1/2 c. butter, melted
- 1 tsp. salt
- 1 (10 oz.) pkg. frozen chopped broccoli
- 8 1/2 oz. quick corn muffin mix
- 1/3 c. chopped onion
- 3/4 c. cottage cheese
- 4 eggs, slightly beaten
Directions

1Thaw and drain broccoli.

2Combine melted butter, onion, salt, cottage cheese, broccoli and beaten eggs, blending well.

3Sour cream may be substituted for cottage cheese.

4Stir in muffin mix. Pour into greased 13 x 9 x 2-inch baking pan.

5Bake at 400° for 20 to 25 minutes.

6Makes 12 servings.
