- 1 bunch fresh broccoli
- 1 small onion, chopped
- 4 Tbsp. (1/2 stick) oleo
- 4 Tbsp. flour
- 1 tsp. Lawry's salt
- 1 c. milk
- 3 eggs
- 1/4 c. parsley, chopped
- 1/2 c. mayonnaise
Directions

1Trim and discard outer leaves and tough stems from broccoli; chop and boil flowerets in salted water for 10 minutes.

2Drain well.

3Saute chopped onion in oleo.

4Stir in flour and Lawry's salt; cook and stir constantly just until bubbly.

5Stir in milk; cook and stir sauce until it thickens and boils 1 minute.

6Beat eggs slightly in a small bowl; stir in generous 1/2 cup of the hot sauce.

7Quickly stir back into sauce in pan.

8Cook, stirring, until mixture thickens.

9Stir in mayonnaise and parsley.

10Fold in drained broccoli.

11Spoon into a well-greased 5-cup ring mold. Place ring in dish of water to bake.

12Bake for 30 minutes in a 350° oven.

13Loosen sides and turn out onto a plate.

14Serve.
