- 2 c. chopped broccoli
- 1 c. thinly sliced onion
- 1 c. sliced mushrooms
- 1/2 c. chopped green pepper
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. oil
- 8 slightly beaten eggs
- 3/4 c. liquid nonfat dry milk
- 3/4 c. grated Parmesan cheese
- 1/2 tsp. crushed basil leaves
Directions

1Saute broccoli, onion, mushrooms, green pepper, salt and pepper in oil in 10-inch ovenproof skillet until broccoli is crisp-tender, 5 to 10 minutes.

2Cool slightly.

3Combine eggs, liquid nonfat dry milk, cheese and basil and blend thoroughly. Stir into mixture in skillet.

4Bake in slow oven (325°) for 20 to 25 minutes or until knife inserted in center comes out clean.

5Cut into wedges and serve immediately.
