Broccoli Frittata

  • 2 c. chopped broccoli
  • 1 c. thinly sliced onion
  • 1 c. sliced mushrooms
  • 1/2 c. chopped green pepper
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 3 Tbsp. oil
  • 8 slightly beaten eggs
  • 3/4 c. liquid nonfat dry milk
  • 3/4 c. grated Parmesan cheese
  • 1/2 tsp. crushed basil leaves

Directions

    Saute broccoli, onion, mushrooms, green pepper, salt and pepper in oil in 10-inch ovenproof skillet until broccoli is crisp-tender, 5 to 10 minutes.

    Cool slightly.

    Combine eggs, liquid nonfat dry milk, cheese and basil and blend thoroughly. Stir into mixture in skillet.

    Bake in slow oven (325°) for 20 to 25 minutes or until knife inserted in center comes out clean.

    Cut into wedges and serve immediately.
