Broccoli Gratin

  • 2 lbs broccoli
  • 1 12 lbs potatoes
  • 2 eggs
  • 4 ounces gruyere cheese, grated
  • 4 ounces creme fraiche
  • 2 ounces butter
  • salt & freshly ground black pepper
  • 1 pinch nutmeg

Directions

    Peel the potatoes and cook in boiling salted water.

    Wash and chop up the broccoli and cook in boiling salted water for 20 minutes.

    Drain the brocoli and potatoes and blast quickly in a blender.
  4. 4
    Add the creme fraiche, half the gruyere and the egg yolks.

    Season with salt, pepper and nutmeg.

    Beat the egg whites until firm and add.

    Pour into a gratin or baking tin, add bits of butter and the rest of the cheese.

    Bake at 425F for 30 minutes.
