- 2 lbs broccoli
- 1 12 lbs potatoes
- 2 eggs
- 4 ounces gruyere cheese, grated
- 4 ounces creme fraiche
- 2 ounces butter
- salt & freshly ground black pepper
- 1 pinch nutmeg
Directions

1Peel the potatoes and cook in boiling salted water.

2Wash and chop up the broccoli and cook in boiling salted water for 20 minutes.

3Drain the brocoli and potatoes and blast quickly in a blender.

4Add the creme fraiche, half the gruyere and the egg yolks.

5Season with salt, pepper and nutmeg.

6Beat the egg whites until firm and add.

7Pour into a gratin or baking tin, add bits of butter and the rest of the cheese.

8Bake at 425F for 30 minutes.
