Broccoli-Ham Soup

Ingredients

  • 6 oz. ham, diced
  • 2 cloves garlic
  • 2 Tbsp. olive oil
  • 1 1/2 c. chopped fresh tomato, skinned and seeded or 1 (15 oz.) can tomatoes, seeded (saving the juice)
  • 3 c. chopped fresh broccoli, stems peeled
  • salt and pepper and a large pinch thyme leaves
  • 6 c. chicken stock or 6 bouillon cubes plus 6 c. water
  • 1/2 c. uncooked small shell pasta

Directions

    Saute ham and garlic in the olive oil, about 3 minutes.

    Add tomato, chopped plus juice, stock, thyme, salt and pepper.

    Bring to a simmer.

    Then add broccoli and pasta and cook until all ingredients are tender, about 20 minutes.

    Adjust seasoning. Sprinkle each serving with cheese.
