Broccoli-Ham Soup

Ingredients
- 6 oz. ham, diced
- 2 cloves garlic
- 2 Tbsp. olive oil
- 1 1/2 c. chopped fresh tomato, skinned and seeded or 1 (15 oz.) can tomatoes, seeded (saving the juice)
- 3 c. chopped fresh broccoli, stems peeled
- salt and pepper and a large pinch thyme leaves
- 6 c. chicken stock or 6 bouillon cubes plus 6 c. water
- 1/2 c. uncooked small shell pasta
Directions

1Saute ham and garlic in the olive oil, about 3 minutes.

2Add tomato, chopped plus juice, stock, thyme, salt and pepper.

3Bring to a simmer.

4Then add broccoli and pasta and cook until all ingredients are tender, about 20 minutes.

5Adjust seasoning. Sprinkle each serving with cheese.
