  • 4 tsp. olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 Tbsp. water
  • 4 c. broccoli flowerets (1 medium head)
  • 1 small green pepper, cored, seeded and cut into 1/2-inch strips
  • pinch of red pepper flakes (optional)
  • 1 tsp. dried oregano

Directions

    In heavy 12-inch skillet, heat olive oil for 1 minute.

    Add onion, garlic, water, broccoli, pepper, oregano and pepper flakes. Cook, stirring, for about 2 minutes.

    Cover skillet, reduce heat to low and cook 8 to 9 minutes longer, stirring often until tender, but crisp.
