Broccoli Lemon Rice

- 1 lb broccoli
- 1/2 cup long grain rice
- 1 medium onion, chopped
- 2 tablespoons butter
- 1 cup chicken broth
- 1 can sliced water chestnuts, drained
- 1 teaspoon finely shredded lemon, rind of
- 1/4 teaspoon lemon pepper seasoning
Directions

1Cut broccoli into 1/2 inch pieces.

2Cook broccoli covered in a small amount of boiling salted water for 5 minutes or until tender-crisp; drain.

3In a medium saucepan; cook the rice and onion in butter until onion is tender but not brown.

4Remove from heat.

5Stir in the broth, water chestnuts, lemon peel and lemon-pepper seasoning.

6Bring to boiling; reduce heat.

7Cover and simmer about 15 minutes or until the rice is tender.

8Stir in the cooked broccoli.

9Remove from heat.

10Let stand covered for 5 minutes.

11Fluff with fork.
