Tofu Lasagna

Ingredients

  • 1 large onion, chopped
  • 2 Tbsp. butter
  • 4 oz. mushrooms, chopped
  • 1/2 lb. lasagna noodles
  • 1 (10 oz.) pkg. tofu
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 Tbsp. parsley
  • 1/2 Tbsp. basil
  • 16 oz. Mozzarella cheese
  • 1/2 c. Parmesan cheese
  • 1 large container spaghetti sauce

    Saute onion in butter; add chopped mushrooms and cook slightly.

    Set aside.

    Boil noodles; then drain.

    Drain tofu and mash; add to onion and mushrooms along with spices.

    Spread enough spaghetti sauce in bottom of a 9 x 13-inch pan to cover.

    Layer noodles, tofu mixture, Mozzarella cheese and sauce.

    After last layer of noodles, finish with sauce, Mozzarella cheese and Parmesan cheeses.

    Bake at 350° for 30 minutes or until cheeses are golden brown and sauce is bubbly.
