Ingredients
- 1 large onion, chopped
- 2 Tbsp. butter
- 4 oz. mushrooms, chopped
- 1/2 lb. lasagna noodles
- 1 (10 oz.) pkg. tofu
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 Tbsp. parsley
- 1/2 Tbsp. basil
- 16 oz. Mozzarella cheese
- 1/2 c. Parmesan cheese
- 1 large container spaghetti sauce
Directions

1Saute onion in butter; add chopped mushrooms and cook slightly.

2Set aside.

3Boil noodles; then drain.

4Drain tofu and mash; add to onion and mushrooms along with spices.

5Spread enough spaghetti sauce in bottom of a 9 x 13-inch pan to cover.

6Layer noodles, tofu mixture, Mozzarella cheese and sauce.

7After last layer of noodles, finish with sauce, Mozzarella cheese and Parmesan cheeses.

8Bake at 350° for 30 minutes or until cheeses are golden brown and sauce is bubbly.
