Broccoli Mushroom Quiche

  • 1 deep pie shell (uncooked)
  • egg white
  • 1 c. grated Swiss cheese
  • 1 c. grated sharp cheese
  • 1 c. half and half
  • 6 large mushrooms, sliced
  • 1 (10 oz.) pkg. broccoli, drained
  • dash of pepper
  • 4 eggs
  • 1/2 c. chopped onion
  • 1/4 c. butter
  • 2 Tbsp. parsley
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg

Directions

    Brush pie shell with egg white and refrigerate.

    Spread cheese in pie shell.

    In the butter, saute onion until tender.

    Add mushrooms and cook 5 minutes.

    Add broccoli, parsley, salt and pepper.

    Mix well.

    Remove from heat and pour in pie shell.

    Beat eggs; add half and half and nutmeg.

    Pour over vegetables and cheese in shell.

    Bake at 375° about 40 to 50 minutes, until golden brown and puffed.
