Broccoli-Onion Quiche

  • 1 (9-inch) pie crust (deep dish frozen is good)
  • 1/4 c. Parmesan cheese (divided in half)
  • 2 1/2 c. fresh broccoli
  • 1 to 1 1/2 c. sherdded Colby cheese (Swiss or Cheddar may also be used)
  • 1/4 to 1/2 c. chopped onion (according to taste)
  • 3/4 to 1 c. half and half
  • 2 to 4 Tbsp. chicken broth or bouillon
  • 1/2 c. sour cream or sour slim if watching weight
  • 1/2 tsp. salt or to taste
  • 4 to 5 eggs
  • dash of baking powder
  • dash of pepper or Tabasco (if desired)

Directions

    Prick pie crust and bake 5 minutes at 450°.

    Sprinkle with 2 tablespoons Parmesan cheese.

    alternate layers of broccoli pieces and grated cheese-onion mixture.

    Beat eggs and all other remaining ingredients together and pour over broccoli-cheese mixture.

    Sprinkle with rest of Parmesan.

    Bake at 450° for 10 minutes; reduce heat to 325° and bake 20 minutes more or until set.
