Broccoli Orzo

- 12 ounces orzo
- 1 tablespoon olive oil
- 1 broccoli head, cut into florets
- 1 small yellow onion diced
- 3 cloves garlic minced
- 1/4 cup fresh spinach leaves
- 8 grape tomatoes - 10
- salt
Directions

1In a pot of boiling water, add the orzo and cook for 6 - 8 minutes. Drain and set aside.

2Heat a skillet on medium heat. Add the oil and cook until warm.

3Begin by adding the onions and soften for 3 - 4 minutes.

4Add the garlic and tomatoes and cook for 1 - 2 minutes.

5Add the spinach and cook until wilted.

6Salt and pepper to taste.

7Pour in the cooked orzo and cook for 1 - 2 minutes until all the flavors have absorbed together.

8Test for salt and pepper.

9Serve and enjoy!
