Ingredients
- 1 lb. broccoli, coarsely chopped
- 3 Tbsp. butter
- 2 Tbsp. flour
- 3 Tbsp. onion, chopped
- 1 1/2 c. milk
- 2 c. shredded cheese (Swiss, etc.)
- 2 eggs, beaten
- 1 prebaked pie or quiche shell
- meat of choice (bacon, ham, sausage, pork or tuna, etc.)
- 1 1/2 tsp. salt
Directions

1Preheat oven to 325°.

2Bake frozen pie shell.

3In medium saucepan over high heat steam broccoli.

4In another pan over medium heat melt butter.

5Stir in flour and salt until smooth.

6Add onion and cook 1 minute.

7Slowly stir in milk, stirring constantly, until mixture thickens and begins to boil.

8Remove from heat.

9Stir in broccoli and cheese.

10When cheese has slightly melted, stir in eggs.

11Add cooked meat.

12Bake 30 minutes or center is firm to touch.
