- 1 cup Martha White self rising cornmeal mix
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 egg
- 2 tbsp. water
- 1 lb. fresh or frozen fish fillets cut into pieces
- vegetable oil or shortening for frying
Directions

1Stir together cornmeal, salt and pepper in a shallow dish. In another bowl, beat egg, add water and blend well. Coat fish pieces in seasoned cornmeal, dip in egg mixture. Coat pieces again with cornmeal. Fry a few pieces of fish at a time in hot oil until golden brown. Drain on paper towel.
